Manuel Moreno Rojas began his vocational career when he was 14 y.o. working in the Reina Cristina Hotel in Algeciras, his birthplace. Thirty-four years ago, along with his wife, María del Rosario Sánchez, “Mari”, the restaurant was hatched by Palmones river. Today, El Copo (an old art of fishing) ruled by Gema, Vanessa and Estrella -the 3 daughters of “Manolo”- is a most successful and recognized reference in fine cooking all over Andalusia and Spain, with an assiduous international and local clientele enjoying innovative - traditional game meat and fish dishes as well as superb greens from the area. Sardine, fresh anchovies, sea bass, mackerel, prawns, clams, seaweed, red tuna of “Almadraba” tunny fishing… and much more. El Copo has a splendid hatchery with lobsters, crabs, oysters, etc.
Some of the most requested dishes are the rice pot with cuttlefish, prawns from Sanlúcar de Barrameda and sea plankton, fat noodles with mackerel, rice with clams and redfish, the traditional and splendid “Mama Curra” tuna butter… Best home made desserts and excellent wine list.
