The organic cooking contest BioRestauración already has the Cordovan representative who will compete in the Andalusian final on December 18. The provincial final was held at the restaurant Casa de Manolete Bistró, and the chef Óscar García Pérez, with his recipe ‘Sturgeon and Guadalquivir’, has been selected by the jury.
Diego Granado, secretary of Ecovalia, said that in this provincial final “the level has been very high, with very elaborate recipes. Chefs and restaurants have to continue working and betting on organic products that are increasingly demanded by customers.
The jury was composed of María Escribano García, manager of ‘El Caballo Rojo’, Ángel Sánchez Pozuelo, owner of ‘La Taberna de Almodóvar’ and chef Juan José Ruiz, from ‘Casa de Manolete Bistró’.
