Mazamorra

Preparation
- Originally it was bean flour or bread that gave solidity to the whole. Nowadays, these are almost entirely replaced by crushed almonds.
The order of the ingredients is also very important; after having made a dough with the bread, garlic and some almonds we must incorporate the oil to the thread.
- Put the bread, garlic, salt and vinegar in the mixer.
- Before blending, add a good splash of extra virgin olive oil.
- We beat well until we get a very creamy texture.
- Serve the cream in a deep dish and garnish with the grapes and the Iberian ham.
Finish with a drizzle of EVOO and let's eat!
Ingredients
- 250 gr of white bread crumbs
- 1 clove of garlic
- 150gr of raw and peeled almonds
- 200gr extra olive oil
- 8 peeled and deseeded grapes
- 4 loins of smoked sardines
- 1 jar of black fish spherifications or, failing that, lumpfish roe.
- Water, as much as you need
- Vinegar and salt to taste
