Norway Lobster Tartare with Tomato sorbet and Sherry

Preparation
Chop the norway lobster, chive and coriander. Put it in a bowl, add salt, lemon juice and two drops of soya sauce. To marinate for a while. Place in a round mold and garnish with cherry tomato, the sorbet and the lettuce.
Ingredients
- 30 g tomato
- Chopped, 170 g norway lobsters, raw and peeled, 40 g juice of 2 lemons, 2 drops of Soybean-Soya sauce, 30 g fresh chive, chopped, some Cherry tomato, 1 g fresh coriander, some lettuce.
1 litre tomato sorbet, ingredients:
175 g egg white, 400 g dextrose, 50 g stabilizer, 250 g tomato concentrate, 10 cl ‘La Goya’ Manzanilla-Sherry, 7 g table salt.
Mix all ingredients, in cold, whip and pour into the sorbet maker.
